RETAIL WINE is 87% WATER (H20)

12% ALCOHOL ~ ETHANOL (CH3CH2OH)

And 1% *OTHER* for Aroma & Taste !

 

ACID gives WINE its Sour & Dry taste

SUGAR gives WINE its Sweet & Mellow taste

ESTERS provide aromas & tastes of Fruit & Flower

They are derived from Yeasts used in fermentation.

PHENOLS contribute to aroma & taste

They are derived from Grapes & the Ageing Process.

 ACEALDEHYDE (CH3CHO) imparts an Apple aroma

ACETIC ACID (CH3COOH) and higher acids

Impart a CHEESY flavour & aroma

GLYCEROL (CH2OHCHOHCH2OH) a sweet & fruity taste 

Higher Alcohols  contribute to aroma & taste

AMINO ACIDS include Proline & Argenine etc !

 

MINERALS include ~ Iron ~ Magnesium ~ Zinc

COLOUR is derived from the skin of Black & Red Grapes

SODIUM SULPHITE (Na2SO3) is added as a Preservative !

OVER 50% of WORLD WINE is produced in EUROPE

WINE has been produced for thousands of years and modern

We should explain some of the Chemistry of Wine. 

FERMENTATION converts some of the Grape Sugar into

ETHANOL  (CH3CH2OH) and CO2 ~ Some of the ETHANOL

is oxidised to ETHANAL (CH3CHO) and then to ETHANOIC

ACID (CH3COOH) which is VINEGAR ~ SIMPLE ! 

This explains why ~ when opened and exposed to AIR

(oxygen) WINE should be consumed within 2 or 3 days !

This gives MEN an good scientific excuse to always finish

a BOTTLE ! If you visit a WINERY and see the TLC that is

lavished on growing the GRAPE and producing and blending

and aging and marketing the WINE ~ Then it is well worth

the asking PRICE ! Angela & I always try to visit VINEYARDS

  (for Academic Reasons !) when we visit a New Country ~ We
