Making Do For Christmas

No beef roast cut to order.

No Bone-in Turkey breast.

It's Christmas Eve,

The stores are packed,

And I just need to rest.

 

Luckily, my husband and our son 

are very easygoing, 

As long as there is food to eat, 

To me they won't come moaning. 

 

I Googled recipes and found a stir fry 

made with veggies from the freezer.

I'm skeptical, but the author claims 

they'll turn out hot and crisp.

So, I'll defrost some jumbo shrimp 

And hope it's a tasty dish.

 

I have some cans of white clam sauce 

And dry whole wheat linguine.

That's a meal that will come

Directly from the pantry.

 

So for Christmas Eve and Christmas day

We'll have something to eat.

I'll bake brownies from a boxed mix

To end with a fudgy treat.

 

Okay, it's not a special roast

Decked out with all the trimmings,

But we'll all be together 

To celebrate the season.
