In went the coffee,
Piping hot,
Dark as night.
Hot milk
Carefully poured,
The night lightened
Into the brown of autumn.
The froth delicately flowed,
Covering the brown
With the purest of white.
Chocolate gently shook
Covering the white,
In deep, deep brown.
The probe gently moved
Creating the glory of art,
In browns and white,
As the skill of the Barista
Created a unique image,
On the Cappuccino.

Great write Andy although, as I know I've said before, I much prefer coffee made in a cafetiere. I recall the grumpy old men on the tele complaining about being served by Baristas of uncertain east European origin who could hardly make themselves known and had no knowledge of coffee. I can relate to that having asked in Costas (on my one and only visit) about the coffee and being given a blank look - he had no idea of the type or origin of the coffee being served.
We go to Coffee#1 and they seem to be very knowledgeable about their coffees. The one they use for their normal coffee are Arabica beans which I find very good. They have a guest coffee as well which at the moment is a Honduras coffee which again is very good but not quite as strong as the Arabica, which I prefer.
Arabica is preferable to Robusta and is the one generally available commercially. There are many cultivars which vary in flavour etc depending on growing conditions and country of origin - my own preference is Ethiopian.
Mine is Colombian during he day and after dinner in the evening I have Brazilian Altos, I buy the beans and grind them immediately before use, I do use a filter machine though which seems to prepare it to my liking, it is relatively new, only about five years old. I do have a peculator which we had as a Wedding present nearly thirty seven years ago!
Well, you'll enjoy your coffee, and so will Michael, but not in Costas. I shall spit out most coffee.

You are possibly a wealthy man Goldfinch, for the price of a coffee in so many places has just become silly. I'd be interested to know what you pay for your enjoyable cup.
My favourite (affordable) bean is Mocha. But nowadays if you ask for a Mocha they serve you up an americano (spurious beans) with chocolate added. Quite a nice drink but where are my favourite beans..... killed by commercialisation.
I'm with you dusk. There is a world of difference between the mocha bean (from Mocha in Yeman) which is an Arabica derivative to the stuff served up in coffee bars with chocolate added.
Nearly all the coffee chains only serve blends - I can buy single malt in a pub so why not 'pure' coffee in a coffee house?
