We should explain some of the Chemistry of Wine.
FERMENTATION converts some of the Grape Sugar into
ETHANOL (CH3CH2OH) and CO2 ~ Some of the ETHANOL
is oxidised to ETHANAL (CH3CHO) and then to ETHANOIC
ACID (CH3COOH) which is VINEGAR ~ SIMPLE !
This explains why ~ when opened and exposed to AIR
(oxygen) WINE should be consumed within 2 or 3 days !
This gives MEN an good scientific excuse to always finish
a BOTTLE ! If you visit a WINERY and see the TLC that is
lavished on growing the GRAPE and producing and blending
and aging and marketing the WINE ~ Then it is well worth
the asking PRICE ! Angela & I always try to visit VINEYARDS

Personally, when I do drink wine, I prefer Italian red wine. My mom loves wine, but cannot drink to much because of the sulfur. Still, a little wine is good for the stomach.

Thanks for your comment DION ! Most things in moderation are GOOD for you ! It is excess that dulls ones senses ! In BROTHER PAULS Water was often polluted (like Mexican Tap Water) so he advised Timothy to *Take a LITTLE WINE for his stomachs ake and oft infirmities !* Note He a LITTLE ! Moderation in All Things is also the KEY !

Thanks *OUT* for a very interesting HISTORICAL comment on WINE which has been used ceremoniously & spiritually down the ages ! I agree MUNICIPAL water contains CHLORINE to Kill bacterian etc and FLUORIDE to strengthen Teeth Enamel. When I used to visit the Local prison to teach GUITAR the inmates warned me that the CUP of TEA they served me cantained BROMIDE to reduce LIBIDO ! So the GOVERNMENT could do the same to keep the population DOWN ! WINE is a many splendoured thing !

Greetings DA ~ Thanks for your comments ~ I agree ! At a recent Wedding ~ for his SPEECH ~ the Best Man raised his Glass of Vino and said *DOWN THE HATCH* and sat down ! Drinking Wine (like SEX) is nuch better EXPERIENCED than EXPLAINED ~ hoever if More MEN understood SEX (and foreplay) from a LADIES point of view ~ then More LADIES would be more SATISFIED. The same is true of WINE ! Some of my Students are studying Catering so it is one of my tasks to teach the EONOLOGY ~ The Science of WINE. The reason for this is that when they work as Waiters (including Wine Waiters) in HOTELS the Customer will EXPECT THEM to suggest a Wine which complements the Meal & say WHY. They should not choose the most expensive but the most appropriate ! On CRUISES Wines are often suggested to complement the MAIN COURSES ~ It is a Black Art. However most Poeple know what they prefer and stick to it. The same is true of BEERS & SPIRITS ! There is a Saying *When in Rome ~ Drink as the Romans do !* and there is a lot of sense in that ~ OK Thanks again for tour comments

It is a subject I teach my Catering Students because when they work in Hotels they are expected to suggest an Appropriate Wine to the Clients to complement the Meal ~ A Black Art. One should never add water to Wine in a Restaurant or Hotel ~ because the VINTNER has bottled it to perfection and any dilution would disturb the BALANCE. However drinking RUSTIC RED in a French Farmhouse one is EXPECTED to *Dilute with rustic water to taste !* Rule No. 2 NEVER EVER feed undiluted WINE to a DOG !

THANKS UNCLE MICHAEL ~ YES ! We always read to comments people make on POEMS often more enlightning than the POEMS themsleves. I (BRIAN) teach EONOLOGY (Wine Technology) to the Catering Students with PRACTICAL (Tastings and I do get PAID) and I also A-Level Human Biology (without PRACTICAL !) to the Prenursing Students. To fully appreciate both SEX & WINE a little knowledge leads to a better understanding of BOTH and ANGELA agrees with me ! We can share an identical Bottle of Wine 11,500 miles apart ~ and comment on its *QUALITY* but not *Physical SEX* ! I envy ANGELA this week because she is visiting the Auckland Vineyards with her MAMA & PAPA and helping her PAPA to promote RIOJA !

Thanks for the lesson but wine is easily chosen, you like it or you don’t like it, I have found many that I do like and am prepared to try others.
I used to make wine some years ago, most was OK but one I made was so awful that I used it to strip paint! Lol
YES INDEED UNCLE ANDY ~ Over the Years one *discovers* a number of Wines (White - Rose - Red) and different varieties of Grape that are *pleasing* to ones palate and complement various *foods*. It is wise to make a note for future enjoyment ! Angela & I have similar tastes and being a VITNERS Daughter she does keep notes. Home made wine is a very BLACK ART ! The bitter principles are often ROUGUE MOLECULES ! You will be familiar with Column Chromatography and an impotable HM Wine can be greatly improved by passing it through an ALUMINA or SILICA column ! All the WATER & ETHANOL passes through and magically most of the positive flavours & aromas while the ones which rendered the WINE impotable are trapped on the COLUMN ! The secret is to replace the column regularly to prevent the *Bitter Principles* moving through. Similarly a domestic tap water softener can be used ! Of coure one could always distill out the alcohol and make VODKA but that is illegal in the UK ! Pleased you liked the Presentation !
