- Comment from author about the poem: When MILK (cow ~ goat ~ sheep etc) curdles and the curd is filtered and pressed (to remove excess whey ~ cheese is formed ! Because cheese is such a "natural" product it has been known and used as a food for thousands of years. My Grandparents told me that during WW2 (1939 ~ 45) sour milk was always filtered and converted into "Cottage Cheese". Cheese is rich in CALCIUM (for bones) and FAT (for energy). Americans ~ when they visit the UK ~ are amazed at the taste and range of British Cheeses (there are over 700 varieties !) and the variety of texture. The average UK household would have about 5 types of cheese. In my opinion the best British Cheese is STILTON (from Melton Mowbray in England) ~ tangy and creamy ! It is a must at Christmas ~ served with biscuits port and grapes ~ but is an essential cheese all year round. Delicatessens stock 50 or more varieties of Cheese (many are British) so we have no excuse for not trying them. Cheese please Louise ! Comments welcome ~ Love to all BRIAN ~ XOX

We don't have great cheeses in the USA. Store shelves are filled with tasteless wedges that look like cheese and pre shredded varieties that have the consistency of rubber.
We do have imports at prohibitive prices. Nor do we have great breads. Wine, bread and cheese is awesome.
Thanks \"A\" ~ I idid not want to be too derogatory about US Cheese ~ BUT ~ Cheese I have tried in the US is US and tastes as though it has been manufactured by DU PONT rather than KRAFT ! Europe also has thousands of varieties of cheese and being so close they are similar in price to UK cheeses ~ it s the same with European Wines. BREXIT won\'t make much difference because \"trade is trade\" and we are a Nation f Shopkeepers ! BRIAN

We are blessed in the UK with some great cheeses - to hell with the cholesterol - where's the pickle? Your poem makes my mouth water. We had a tomato, onion and haloumi salad dressed with quality olive oil, seasoning, balsamic and thyme to accompany our lunch today - sublime!!

HI CHRIS ~ thanks for reminding me that you can find "Traditional Farmhouse Cheeses" in the US. I found the AMISH MILD CREAMY CHEESE in Philidelphia ~ BEAUTIFUL ! A Loaf of Bread ~ A glass of Wine ~ A wedge of Cheese and Thou ! What more could one ask. In the UK we have lots of Cheese & Wine Parties which are always great fun ! Party Hugs ~ BRIAN
