REMEMBER ME MAMMY cookin' in de kitchen

I CLOSE me eyes an' de spicy 'roma still dere !

CHICKEN PIECES in de fryin' pan coated wit

EACH SPICE ~ Time ~ Curry ~ All Spice !

 

PUT IN HOT FAT to brown wit onions an'

EXTRA SPICE ~ chilli ~ garlic an' tomato

ADD WATER an' simmer for 30 minutes

SMELL IS CARIBBEAN !  Chick is tender !

 

NOW COOKIN'  de Rice 'n Peas ~ Allilujah ! 

 

COVER BASMATI RICE wit water add spice onion & bullion ~ Boil

HALF HOUR an' all liquid an' spice will be absorbed !

I DEN ASK  MAMMY  "Can i stir in de Black Eyed Beans

CHILE ~ SHE SAY ~ All Caribbean Men luv to cook an' eat !

KEEP HOT ~ Serve in hot bowl add hot chick ~ PARADISE !

  • Comment from author about the poem: I know the Ladies like a recipe ~ the cooking information is in the Poem but there was not enough room for quantities so here is the information ! The recipe fees FOUR so you need either 4 chicken legs or 4 breast portions (as shown in photo) or a mixture ~ Legs for the Men and Breasts for the Ladies ! For the Chicken you need ~ 2 red onions ~ 4 large tomatoes ~ 450ml of water and spice according to taste ~ OK For the Peas 'n Rice you ned ~ 125g of brown basmati rice ~ 1 red onion ~ 400g can of black~eyed beans and 600ml of water.           Yes CHRIS ~ looks as good as it tastes ! You are much nearer the WINDIES than I am so no excuse ! I will post the recipe (quantities) as a comment OK . One of the problems of MPS is that The Poem Menu is only visible for TWO DAYS so anything in excess of 10 comments is exceptional ~ we did really well to get 12 on "LOVE IS" we must collaborate again sometime !
