Before you set your guests on fire (and before you
blend your soup) strain off the liquor and taste it !
Is it's too HOT~ freeze some of the liquor (for next
time) and replace it with water ~ OK

Super advice on herbs and spices Brian - a good tip too if the dish tastes too hot.
Thanks FAY ~ As you know herbs ~ spices ~ seasonings are very important in cooking. I do fine that "home cooks" (do you ever watch "Come Dine with Me"" ?) do tend to overdo the CHILL! and the CURRY POWDER which spoils the meal and wastes the other ingredients ! You can always check ~ half way through ~ and rectify ~ as I suggest ! In MEXICO they often serve the Chilli Sauce as an extra so you can adjust how PIQUANTE you want it. They have two words for HOT Calliente (which is temperature) and Piquante (which i spiciness) OK ~ Yours BRIAN.
My wife is an amazing cook and uses all the spices - its in her Asian blood I guess - I grow coriander as well as all the more common herbs (okay I know your super poem is about spices but they all serve the same purpose) and have just gathered some bay leaves for drying - taste more strong in their dried form.

Thanks for this beauty. Learned some more today. I love the spices and use many of the ones mentioned by you here. One that I use a lot is basil. I have a little garden of basil.
HOLA MALU ~Thanks there are always new herbs for us to try ! BASIL is very versatile and has a distinctive taste ! It can be used to ameliorate the flavour of fruit and is the main ingredient of Pesto Sauce. It is used in Tomato Soup and other soups. It enhances the flavour of meat & fish dishes. A herb garden encourages the use of herbs ! ABRACOS ~ BRIAN
I was at a part-foodie show. I was on fire sampling a samosa! I have to stay with mostly plain stuff, with bit of a dicky tummy at times!
